We are in the oldest restaurant in Madrid, but not only in this city, as the Guinness Book of Records in 1987 classified it as the oldest restaurant in the world that has remained open without interruption since 1725, a year that is reflected at the top of the old entrance. Thanks to the preserved documentation, we know that it was a French chef named Jean Botín, the first of his family to arrive at the court during the Habsburg period to work in what he did best, and that it was his nephew at the beginning of the 18th century who opened the establishment that has survived to this day. Today, the original oven is still preserved and it is considered one of the best restaurants in the city where you can taste the exquisite cuisine of Madrid.
